Ingredients

sliders and salad
  • 600g Quality Mark beef rump steak

  • 1 Tbsp oil

  • 2 Tbsp plain flour

  • 1 onion

    roughly chopped
  • 4 garlic cloves

  • 1 tsp paprika

  • 1 tsp mixed herbs

  • 400ml beef stock

  • 1 tsp salt

  • 3 cups crispy salad

  • ½ cup pickled gherkins

  • 12 brioche slider buns

mustard mayonnaise
  • ½ cup mayonnaise

  • 2 tsp Dijon mustard

Preheat the oven to 160C.

Heat the oil in a large frying pan. Dust the beef generously with seasoned flour.

Sear in the hot pan on all sides then place into an oven-proof casserole dish. Add the onion, garlic, paprika, herbs, stock and salt. Cover tightly and place into the oven for 2 hours or until the meat is tender. Turn once during cooking.

While the meat is hot shred with two forks.

Mix the mayonnaise and mustard in a small bowl.

to assemble

Toast the buns for 4-5 minutes. Place a generous amount of shredded meat on the base, and top with crispy fresh salad and a pickle. Smother the top of the bun with mustard mayonnaise.
