Ingredients

Vietnamese Dressing
  • 1/4 cup brown sugar

  • 1/4 cup fish sauce

  • 3 Tbsp lime juice

  • 1 Tbsp lemongrassi

  • 1 Tbsp grated root ginger

  • 2 tsp sesame oil

  • 1/3 tsp chilli flakes

Balsamic Dressing
  • 1/4 cup balsamic vinegar

  • 3/4 cup extra virgin olive oil

  • 1/4 tsp salt and pepper

Green Goddess
  • 1 cup Greek style yoghurt

  • 1 cup parsley

  • 1 cup mixed herbs

    (dill, mint, tarragon and/or cilantro)
  • 2 Tbsp finely chopped chives

  • 2 Tbsp lemon juice

  • 1/2 tsp lemon zest

  • 1 Tbsp extra virgin olive oil

  • 2 tsp capers

  • 1 garlic clove

  • 1/4 tsp sea salt

Honey Mustard
  • 1/3 cup Dijon mustard

  • 1/4 cup honey

  • 1/4 cup mayonnaise

  • 1 Tbsp lemon juicei

  • 1/4 tsp cayenne pepper

Citrus Vinaigrette
  • 1/4 cup olive oil

  • 2 Tbsp orange juice

  • 1 Tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey

Sesame Dressing
  • 2 Tbsp tahini

  • 1 Tbsp Dijon mustard

  • 2 Tbsp soy sauce

  • 1 & 1/2 Tbsp sesame oil

  • 1 Tbsp rice wine vinegar

  • 2 Tbsp orange juice

  • 2 Tbsp water

  • 1 Tbsp white sugar

Smoky Paprika
  • 1/2 cup red wine vinegar

  • 1/3 cup honey

  • 1 Tbsp mustard

  • 1 Tbsp lime juice

  • 3/4 tsp ground black pepper

  • 3/4 tsp kosher salt

  • 1 & 1/4 tsp smoked paprika

  • 1 garlic clove

  • 2 Tbsp finely chopped onion

  • 1/4 tsp oregano dried oregano

  • 1/4 tsp white sugar

  • 1/2 cup olive oil

Mint Yoghurt
  • 4 Tbsp fresh mint

    finely chopped
  • juice of 1 lemon

  • 1/4 garlic clove

  • 200g yoghurt

  • 1/4 tsp ground black pepper

  • 1/4 tsp kosher salt

Mayonnaise
  • 3 eggs yolks

  • 1 Tbsp Dijon mustard

  • 1 cup olive oil

  • 2 Tbsp lemon juice

  • 1/4 tsp sea salt

Sriracha Mayo
  • 3 eggs yolks

  • 1 Tbsp Dijon mustard

  • 1 cup olive oil

  • 2 Tbsp lemon juice

  • 1/4 tsp sea salt

  • 1 garlic clove

    finely minced
  • 3 Tbsp Sriracha sauce

Pesto
  • 2 cups basil leaves

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup olive oil

  • 1/3 cup pine nuts

    chopped
  • 2 garlic cloves

    minced
  • 1/4 tsp ground black pepper

  • 1/4 tsp kosher salt

Method

Vietnamese Dressing: Whisk the marinade ingredients together in a bowl to dissolve the sugar. Taste and add more sugar, fish sauce, lime juice or chilli to suit your liking.

Balsamic Dressing: Place ingredients in a jar or container and shake well. Add salt and pepper to taste.

Green Goddess: Blend ingredients in food processor until smooth.

Honey Mustard: Combine and mix well.

Citrus Vinaigrette: Combine and mix well.

Sesame Dressing: Combine and mix well.

Smoky Paprika: Combine ingredients and blend until smooth.
