Moreish bobotie
South African bobotie with apricots and nutmeg

A traditional South African dish that consists of spiced beef mince under a baked egg custard topping.
Ingredients
500g Quality Mark lamb mince
1 Tbsp butter
1 onion
finely diced2 garlic cloves
crushed2 tsp garam masala
1 tsp ground cumin
1/2 tsp ground turmeric
1/2 tsp ground allspice
juice of 1 lemon
2 Tbsp fruit-style chutney
100g dried apricots
chopped25g flaked almonds
lightly toasted
3 eggs
250ml milk
A pinch of ground nutmeg
Method
Preheat oven to 180°C.
Heat butter in a large saucepan and cook onion and garlic (if using) over a moderate heat until softened.
Add minced lamb and cook, stirring often so meat browns evenly and there are no large pieces.
Add salt and pepper to taste.
Remove from heat and combine with remaining bobotie ingredients.
Transfer into a well-greased ovenproof dish.
Spread mixture evenly.
To make topping, whisk the eggs and milk together in a bowl.
Pour over top of minced lamb mixture and sprinkle with a pinch of ground nutmeg.
Put into oven and bake for 30–40 minutes until it is a golden colour.
Sprinkle with almonds and serve.
