A miso marinade is easy to whip together, giving these lamb cutlets a tasty caramelised exterior whilst keeping things light and juicy in the middle. We love these as part of a starter platter, or even as a light midweek dinner with a big green salad and some steamed rice on the side.

Ingredients

  • 8 Quality Mark lamb cutlets

  • 3 Tbsp miso paste

  • 2 Tbsp honey

  • 2 Tbsp mirin

  • 2 Tbsp sake

  • 2 tsp dark soy sauce

  • 2 garlic cloves

    minced

Method

Mix everything, except the cutlets, together in a bowl.

Place the cutlets in a flat dish or a ziplock bag and pour over the marinade.

Cover and place in the fridge for at least an hour, ideally overnight if you can.

When you're ready to cook, pop them on the barbecue, turning every 2 minutes for 8 minutes, until they're cooked.

Pro tip: Watch closely as the honey and miso in the marinade can burn.

Serve on a big platter with sesame seeds scattered over the top, or with a green salad and steamed rice.
