Like a burrito without the wrap, this bowl is brimming with colour, flavour, and protein. Freshen up your salad game with this filling and delicious salad bowl which is quick to whip up and even quicker to wolf down!

Ingredients

Mexi Mince
  • 300g Quality Mark beef mince

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp ground cumin

  • pinch salt and pepper

  • 1 Tbsp olive oil

Salad
  • 2-3 handfuls salad greens

  • 1 can sweet corn

    drained
  • 2 cups pumpkini

    roasted, cubed
  • 1 can black beans

    drained
  • ½ cucumber

    sliced
  • handful cherry tomatoes

    halved
  • ½ red onion

    finely diced
  • plain unsweetened yoghurt

Method

Heat oil in a frying pan, add the beef mince and spices and cook until browned.

Assemble the salad ingredients in bowls, add the beef mince and a dollop of natural yoghurt to serve.
