Do something a little bit different on burger night... go Mediterranean! These lamb burgers are juicy, flavorful, and super easy to make. The addition of feta mint dressing, beetroot, and sundried tomato relish offers an unexpected, yet super homey and familiar taste! You'll love every bite!

Ingredients

Burger patties
  • 600g Quality Mark lamb mince

  • 1 egg

    lightly whisked
  • 2 garlic cloves

    minced
  • 1 onion

    chopped finely
  • 2 sprigs parsley

    leaves only
  • ½ tsp yellow mustard seeds

  • ½ cup breadcrumbs

Feta mint yoghurt dressing
  • 1 garlic clove

    minced
  • 12 mint leaves

  • A few cubes feta cheese

    Sheep's milk
  • 250g Greek style yoghurt

    thick
  • 1 tsp lemon juice

  • 1 tsp kosher salt

  • ½ tsp ground black pepper

To serve
  • 4 brioche burger buns

  • 2 Tbsp mayonnaise

  • 4 slices cheddar cheese

  • tomato relish

  • salad greens

  • some slices of beetroot

  • 2 potatoes

    roasted in wedges

Method

For the feta mint yoghurt dressing

Place all ingredients into a small bowl, stir to combine. Set aside until required.

To cook patties

Mix all mince ingredients together, and into 4 equal portions.

Using clean hands, form each portion into round balls.

Heat 2 Tbsp of oil in a large pan. Place mince balls into hot pan and flatten patties with a spatula.

Cook for 2-3 minutes on high heat, then flip patties over.

To assemble

Toast buns in a hot oven at 180°C for 10 mins, until lightly browned and crisp. Afterwards, spread mayo on cut sides of brioche buns.

Spread tomato relish onto bottom buns and top with salad greens, patties, beetroot slices, mint feta dressing and the top bun.

Serve with wedges or potato gems.
