These salad bowls combine the goodness of New Zealand lamb, cannellini beans, quinoa and fresh salad with the tastiness of tzatziki and crumbled feta.
All that protein will keep you full and support the day's activities.
Ingredients
300g Quality Mark lamb mince
handful fresh herbsi
chopped1 tsp onion powder
1 tsp garlic powder
pinch salt and pepper
1 Tbsp olive oil
1 cup plain unsweetened yoghurt
2 Tbsp lemon juice
½ cup cucumber
dicedhandful fresh herbs
chopped - such as mint, parsley, coriander1 Tbsp crushed garlic

1 can cannellini beans
drained2 cups quinoa
cooked according to packet instructions2-3 handfuls baby spinach leaves
feta
crumbled½ cucumber

Method
Combine the lamb mince in a large bowl with fresh herbs, garlic, onion, salt and pepper. Roll into walnut-sized balls.
Heat a frying pan with a dash of oil and cook meatballs until browned on all sides.
Mix the tzatziki ingredients together in a small bowl.
Arrange the salad ingredients in bowls then top with tzatziki and meatballs with a sprinkle of fresh herbs to serve.
