Sometimes, you just need a chop. Or two! And sometimes, you need chops with an irresistible combination of garlic and herbs. This is one of those times - it's lamb chop o'clock, on the dot. Easy to cook on the barbecue and great for kids and adults alike.

Ingredients

  • 8 Quality Mark lamb cutlets

  • 2 Tbsp Grove avocado oil

  • juice of 1 lemon

  • 2 Tbsp parsley

    finely chopped
  • 1 Tbsp fresh mint

    finely chopped
  • 4 garlic cloves

    minced
  • ½ red onion

    finely chopped
  • salt and pepper

Method

Mix all marinade ingredients in a bowl, adding salt and pepper to your preference.

Place lamb chops in a large zip lock bag, pour marinade over and close bag.

Massage into lamb and marinate for one hour.

Cook on a grill pan or BBQ.
