A delicious and easy pita pocket with juicy beef patties, crunchy salad and creamy tzatziki. Full on flavour and crunch, this is one for the whole family. We used Angel Bay Gourmet Lamb Patties for a great tasting meal in no time at all.

Ingredients
4 Angel Bay Premium Angus Beef Pattiesi
1 cucumber
3/4 cup Greek style yoghurt
2 garlic cloves
pressed or mincedhandful mint leaves
choppedpinch kosher salt
pinch black pepper
4 pita bread
2 cups rocket
1 red onion
sliced12 cherry tomatoes
sliced1/2 cup white rice
cookedhandful fresh coriander
roughly chopped2 lemons
quartered
Method
Prepare the tzatziki by grating ½ of the cucumber and placing in a paper towel to drain liquid
In a bowl add the drained, grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well.
Cover and refrigerate until ready to serve.
Pan fry Angel Bay Gourmet Lite Beef Patties from frozen on a medium heat for 14-15 minutes, turning every 3-4 minutes.

Warm pita breads and cut around the edge in a semi-circle so they open like a pocket.
Dice remaining cucumber into small cubes.
Place rocket, patty, red onion, cherry tomatoes, cucumber, rice, and coriander in the pita.
Top with tzatziki and serve with a lemon on the side.
