Classic flavours of lemon and thyme give this lamb dish loads of oomph while keeping it healthy and nutritious. Green beans are great when in season, otherwise swap them out for broccoli or another seasonal green.

Ingredients
12 Quality Mark lamb cutlets
2 tsp olive oil
Zest and juice of 1 lemon
150g green beans
2, diced tomatoes
2 Tbsp frecnh dressing
1, cut into wedges lemon
Method
To Grill Lamb

Brush the Lamb cutlets with oil and sprinkle with lemon rind and thyme.

Preheat grill, barbecue or pan until moderately hot.

Cook the Lamb cutlets on the first side until moisture appears, turn, brush with the lemon juice and cook until done to your liking.

Rest for two minutes.

Cook green beans until tender and refresh under cold water.

Toss together with the tomato and dressing.

Serve with the Lamb cutlets and lemon wedges.
