Say hello to DIY pizza night that are as fun to make as they are to eat. Crispy wholegrain wraps get smothered in pizza sauce, piled high with whatever veggies you’ve got in the fridge, leftover lamb, cherry tomatoes, olives, and gooey mozzarella. Pop them in the oven or pizza oven until golden and melty, then serve with a fresh rocket salad. Perfect for a family feast or a get-together with friends. Everyone can build their own masterpiece and eat it straight away. Who said dinner can’t be a party?
Ingredients
3 - 4 cups leftover cooked New Zealand lamb
4 wholegrain wraps
4 Tbsp pizza sauce
½ cup cherry tomatoes
sliced1 courgette
sliced½ red capsicum
sliced¼ red onion
sliced¼ cup olives
halved150g mozzarella cheese
sliced
3 cups rocket
1 pear
sliced2 Tbsp walnuts
toasted1 Tbsp balsamic vinegar
1 Tbsp olive oil
Method
Toast the wraps in a frying pan on each side until crispy. Set aside.
Spread the wraps with pizza sauce and top with sliced vegetables, leftover lamb, tomatoes, olives, and mozzarella.
Transfer to a baking tray and grill in the oven on high for 5 minutes.
Meanwhile, put together the side salad and toss with balsamic and olive oil.
Cut wrap pizzas into quarters and serve with the rocket salad.
Tips:
- Toasting the wraps in a frying hand beforehand allows for a super crispy base.
- This recipe is super versatile, feel free to add any leftover vegetables you have sitting in the fridge.
- You might like to switch mozzarella for feta or your favourite grated cheese.
