Nothing beats a picnic basket packed full of goodies much like these sandwiches. Leftover lamb slices, cheese, pickles, red onion and roasted cherry tomatoes with a few leafy greens inside wholegrain bread that’s been spread generously with smoked paprika mayo, delicious.

300g leftover and sliced Quality Mark lamb shoulder

Bread and Extra Fillings
12 slices wholegrain bread

6 thin slices cheddar cheese
3-4 gherkins

sliced
1/2 red onion

very thinly sliced
iceberg lettuce

Smoked Paprika Mayonnaise
3 eggs yolks
1 tsp Dijon mustard
1 cup olive oil
lemon juice
to taste
salt
1 tsp smoked paprika
Cherry Tomatoes
3 cups cherry tomatoes
2 garlic cloves
extra virgin olive oil
flaky salt
to season

To Make Smoked Paprika Mayonnaise

Place 3 egg yolks and 1 teaspoon Dijon mustard in the bowl of a small food processor.

Process until combined, then very slowly drizzle in 1 cup of olive oil.

Add lemon juice to taste, as the mixture thickens. Season with salt and more lemon juice to taste.

Stir through 1 teaspoon good quality smoked paprika. Transfer to a bowl, cover and keep in the fridge.
