If you haven’t tried making fried rice in the air fryer with New Zealand rump steak, microwave rice, and a frozen stir fry veg mix, you’re seriously missing out! It’s the ultimate quick and easy dinner hack that’s packed with flavour but requires barely any effort. The rump steak adds that juicy, tender bite, while the microwave rice saves you from standing over the stove. Toss in your frozen veggies, give it a good mix, and let the air fryer work its magic. The beef gets crispy edges, perfectly cooked veggies, and all those tasty juices locked in. Ingredients

  • 250gm Quality Mark rump steaks

    thinly sliced
  • 3 tsp salt-reduced soy sauce

  • 1 tsp sesame oil

  • 2 tsp fresh ginger

    minced
  • ½ tsp baking soda

  • 250gm brown rice

    microwaveable
  • 400 g frozen mixed vegetables

    stir fry mix
  • ¼ cup cashew nut

    to serve
  • chillii

    sliced

Method

In a small bowl, mix the soy, sesame and ginger together and add your beef, tossing everything well. Sprinkle over the baking soda, mix through and then leave for 20 minutes to marinate.

Preheat your air fryer to 180 degrees. In the basket, mix together your microwave rice and frozen vegetables. Lay the beef steak strips over the top and cook in the air fryer for 7 to 8 minutes, until the beef has browned.

Serve immediately with cashew nuts sprinkled on top and chilli slices, if you dare.

Tips and tricks

  • Wrap the tray or put a liner in the air fryer - the rice does get blown everywhere and if there are gaps, it will disappear down them.
  • Use whatever frozen vegetables you like - there's a wide range of tasty stir fry combinations on the market.
  • Swap the ginger for garlic too if that's what's on hand.
  • We like brown rice for its nutty taste and hearty texture but any of the other microwave rice pouches or cups will work too.
