Lasagne-style tortilla boats

A super fun twist on the classic lasagne, by using tortilla stand up shells. Found in the Mexican section of your supermarket, they're the perfect size for an individual lasagne situation. Loaded with iron rich beef mince, lentils and a creamy cottage cheese sauce, kids and adults alike will love these!
Air fry them or bake them in the oven, they're a great midweek meal to keep the whole family happy.
Pro tip: Make double of the mince mixture and keep it in the freezer for an easy future meal.
Ingredients
500g New Zealand beef mince
1 Tbsp olive oil
1 brown onion
diced3 garlic cloves
minced1 can lentils
drained1 courgette
chopped1 cup button mushrooms
sliced400g tomato passata
2 Tbsp tomato paste
1 tsp mixed herbs
a pinch of salt and pepper
8 tortilla boats
250g cottage cheese
1 egg
1 cup grated cheese
200g yoghurt
a pinch of salt and pepper
fresh saladi
Method
Heat olive oil in a frying pan and cook onion and garlic until soft. Add the beef mince, breaking it apart as it browns.
Add the courgette and mushrooms and cook for a further 3-4 minutes.
Turn down the heat and add the passata, tomato paste, and mixed herbs. Season with salt and pepper.
Meanwhile, preheat the air-fryer or oven to 200˚C.
Combine the cottage cheese sauce ingredients together in a medium sized bowl. Whisk until smooth.
Spoon the beef mixture into each tortilla boat and top with a layer of cottage cheese sauce.
Bake in the air-fryer or oven for 15-20 minutes, until golden. You may need to do it in batches depending on how large your air-fryer is.
Serve with a fresh salad.
