Think creamy, cheesy, and packed with punchy flavours. We’ve even thrown in some greens to keep things on the straight and narrow. Perfect for when you want a banging meal without messing about.

Ingredients

  • 200g lean lamb stir-fry

  • 2 packs ramen noodles

  • 2 egg yolks

  • ¼ cup grated Parmesan cheesei

  • 1 tsp salt-reduced soy sauce

  • ½ tsp cracked black pepper

  • 1 Tbsp olive oil

  • 2 garlic cloves

    minced
  • 1 cup spinach

    chopped
  • ½ cup edamame beans

To serve
  • chilli flakes

  • parsley

  • lemon zest

  • spring onions

Method

Whisk egg, parmesan, soy sauce, and black pepper until smooth. Set aside.

Boil noodles until just al dente. In the last 1 minute, add spinach and edamame to the boiling water.

Drain everything and reserve ¼ cup cooking water.

Heat oil in a pan over high heat. Stir-fry lamb and garlic for 2–3 minutes. Add chili flakes if using. Remove from heat.

Off heat, toss noodles + veggies into the pan with lamb. Add sauce and reserved water.

Stir vigorously until creamy and emulsified.

Top with parsley, lemon zest, or spring onions and serve.
