Want to give your two-minute noodles a proper glow-up? This Lamb Ramen Carbonara takes your usual quick fix and turns it into something way more impressive. Think creamy, cheesy, and packed with punchy flavours. We’ve even thrown in some greens to keep things on the straight and narrow. Perfect for when you want a banging meal without messing about.
Ingredients
200g lean lamb stir-fry
2 packs ramen noodles
2 egg yolks
¼ cup grated Parmesan cheesei
1 tsp salt-reduced soy sauce
½ tsp cracked black pepper
1 Tbsp olive oil
2 garlic cloves
minced1 cup spinach
chopped½ cup edamame beans
chilli flakes
parsley
lemon zest
spring onions
Method
Whisk egg, parmesan, soy sauce, and black pepper until smooth. Set aside.
Boil noodles until just al dente. In the last 1 minute, add spinach and edamame to the boiling water.
Drain everything and reserve ¼ cup cooking water.
Heat oil in a pan over high heat. Stir-fry lamb and garlic for 2–3 minutes. Add chili flakes if using. Remove from heat.
Off heat, toss noodles + veggies into the pan with lamb. Add sauce and reserved water.
Stir vigorously until creamy and emulsified.
Top with parsley, lemon zest, or spring onions and serve.
