Ingredients
500g Quality Mark lamb mince
½ onion
diced2 garlic cloves
minced¼ cup milk
½ cup breadcrumbs
2 Tbsp beetroot chutney
100g feta cheese
crumbled3 tsp dried oregano
1 tsp ground cumin
1 egg
lightly whisked1 Tbsp parsley
finely chopped
½ cucumber
thinly sliced5-6 radishes
thinly sliced½ red onion
thinly sliced¼ cup parsley
¼ cup fresh mint
salt and freshly ground black pepper
tzatziki sauce
to serve
Method
Preheat your air fryer or oven to 190 degrees.
In a large bowl combine the lamb, sweet beetroot relish, crumbled feta, chopped onion, minced garlic, breadcrumbs, milk, egg, oregano, cumin, parsley and season lightly with salt and pepper.
Mix until everything combined, your hands might be the best tool for this. Shape into two loaves.
Add your meatloaves to a piece of baking paper and put in the air fryer or oven.
Roast until nicely browned, about 20 to 25 minutes. Remove and leave to rest for 5 minutes.
In a large bowl, toss together the sliced cucumber, radishes, red onion, parsley, and mint.
Serve the salad with a slice of meatloaf and a drizzle of tzatziki or extra beetroot relish if you like.
