Lamb Burger
4 Silver Fern Farms Lamb and Kawakawa Herb Burgers

for brushing
4 white bread rolls

split in half and toasted
crisp fried shallots

Caramelised Pineapple
1 Tbsp lime juice
1 Tbsp palm sugar
grated
1 Tbsp fish sauce
4 slices pineapple
fresh
Asian Slaw
1 cup red cabbage

thinly sliced
1 small carrots
julienned
2 spring onions
sliced
¼ cup fresh coriander leaves
chopped
1/4 cup mayonnaise
Use Japanese Mayonnaise
2 tsp wasabi paste
or to taste
1 lime
finely grated zest and juice

For the Caramelised Pineapple

To Serve

To prepare caramelised pineapple, combine the lime juice, palm sugar and fish sauce in a medium bowl.

Add pineapple, stir to coat then set aside to marinate while preparing the remaining ingredients.

Before serving the burgers; barbecue, chargrill, or pan-fry the pineapple for 3-4 minutes until golden and tender, turning frequently.
