Lamb and feta pizza toast, Kiwi style

This is not your average pizza toast. We’ve given the viral classic a bold Kiwi upgrade with tender Silver Fern Farms lamb strips, creamy whipped feta, juicy cherry tomatoes, and a generous sprinkle of za’atar. It’s quick, flavour-packed, and perfect for brunch, lunch, or anytime you want something a little fancy without the fuss. Think of it as your new go-to toast… with serious attitude.
Ingredients
250g Silver fern Farm lamb strips
1 Tbsp olive oil
1 garlic clove
minced1 tsp ground cumin
½ tsp smoked paprika
100g feta cheese
1 Tbsp Greek style yoghurti
1 tsp lemon juice
1 tsp olive oil
2 thick slices of rye bread
1 Tbsp olive oil
½ cup cherry tomato
halved2 tsp za'atar spice mix
fresh mint
to serve
Method
In a small food processor or blender, combine feta, Greek yoghurt, lemon juice, olive oil, and a crack of black pepper. Blend until smooth and fluffy. Set aside.
Heat olive oil in a pan over medium-high heat. Add garlic, then the lamb strips. Season with cumin, paprika, salt and pepper.
Sear for 2–3 minutes on each side or until browned and just cooked through. Set aside to rest.
Brush bread with olive oil and toast in a pan or under the grill until golden and crisp on one side.
Spread a thick layer of whipped feta on the toasted side of the bread.
Top with cherry tomatoes and cooked lamb strips.
Place under a hot grill for 2–3 minutes until the cheese melts and the edges crisp up.
Sprinkle with za’atar, fresh mint or parsley, and a final drizzle of olive oil. Serve warm — fork optional.
