Level up your side dishes with these stuffed kumara that make the most of winter produce. The perfect side for with a steak or roast lamb, they can be made with both baby kumara or the larger ones.

6 medium sized golden kumaras

2 handfuls of purple kale

2 handfuls of kale

2 cloves garlic cloves

crushed

1-2 Tbsp olive oil

1 tsp chilli flakes

1/2 cup grated Parmesan cheese

Method

To Make Dish

Preheat oven to 180˚C.

Prick kumara with a fork and bake until cooked through (about 35 minutes).

While kumara is baking sauté kale in olive oil, garlic and chilli flakes (add a couple tablespoons of water to help wilt the kale).

Split cooked kumara down the middle while still warm and stuff with kale.

Sprinkle with a little parmesan and serve.
