These lamb chops are pure Kiwi comfort food with a twist. Crunchy, golden and coated in that classic onion soup flavour everyone remembers from family dinners, they’re quick enough for weeknights but special enough for Sunday feasts. Serve them with spuds, greens or a fresh salad and watch them disappear in no time.
Ingredients
8 Quality Mark lamb loin chopsi
1 Tbsp olive oil
salt and pepper
to taste1 can reduced cream
1 packet onion soup
1 cup panko breadcrumbs
1 Tbsp butter
melted1 tsp dried parsley
or chopped fresh parsleygrated zest of 1 lemon
Method
Heat the oven to 200°C fan bake. Line a baking tray with baking paper.
Mix the reduced cream and onion soup mix in a bowl to form a thick dip.
In a separate bowl, combine panko breadcrumbs, melted butter, parsley and lemon zest.
Pat the lamb chops dry. Rub with olive oil and season well with salt and pepper.
Spread a spoonful of the onion dip mixture over the top of each chop.
Press the breadcrumb mixture onto the onion dip to form a thick crust.
Place chops on the tray and bake for 12 to 15 minutes, then finish under the grill for 1 to 2 minutes until golden.
Serve with mashed spuds, steamed greens or a simple summer salad.
Pro tips:
- For a quicker, lighter option, cook the chops in an air fryer at 190°C for 10–12 minutes.
- Use leftover lamb or switch to lamb shoulder chops for more budget-friendly options.
- Add a sprinkle of fresh parsley or a squeeze of lemon over the top just before serving to brighten the flavours.
