Forget chicken, these hot honey beef nuggets are where it’s at. Tender New Zealand beef cubes get a quick marinade, then hit the pan or air fryer until crisp and caramelised. A drizzle of homemade hot honey takes them over the edge into full-blown obsession territory. Serve them up with kumara wedges and slaw, or just eat them straight off the tray before anyone else gets a look in.
Ingredients
500g Quality Mark beef steaksi
brisket, sirloin or chuck - cut into 2cm cubes½ tsp baking soda
1 Tbsp water
1 tsp apple cider vinegar
2 Tbsp liquid honey
1 Tbsp soy sauce
salt and pepper
2 Tbsp cornflouri
olive oil
or spray for cooking
½ cup liquid honey
2 Tbsp cider vinegar
1 tsp garlic powder
½ tsp smoked paprika
½–1 tsp chilli flakesi
pinch of salt
Method
In a bowl, toss beef cubes with baking soda, water, vinegar, honey, soy sauce, salt and pepper.
Let it sit for 10 minutes to tenderise and get sticky.
Coat the marinated beef lightly in cornflour or rice flour — this helps form that crispy crust.
Heat a frying pan or air fryer to 200°C. Cook beef nuggets in a single layer until golden and caramelised, about 8–10 minutes, turning halfway.
While the beef cooks, make the hot honey: in a small saucepan, combine honey, cider vinegar, garlic powder, paprika, chilli flakes and salt.
Warm for 2–3 minutes until glossy and fragrant.
Drizzle the hot honey over the nuggets or toss them to coat.
Serve hot with kumara wedges and crunchy coleslaw.
Pro tips:
- For extra heat, add a few drops of chilli oil to your hot honey.
- You can use an air fryer for easy, even crisping.
- Add a squeeze of lime before serving to cut through the sweetness.
