Ingredients

  • 500g Quality Mark beef mince

  • 2 Tbsp olive oil

  • 2 tsp paprika

  • ½ tsp ground cumin

  • 1 tsp dried oregano

  • salt and freshly ground black pepper

  • 2 medium kūmara

  • 250g cottage cheese

  • 1 broccoli

    cut into florets
  • 1 Tbsp crispy chilli oil

  • 1 avocado

  • Drizzle Hot honey

    to serve

Method

Preheat the oven or air fryer to 180 degrees.

Peel and dice the kumara into bite-sized pieces and toss in a bowl with 1 Tbsp olive oil and 1 tsp paprika.

Cook in the air fryer or oven for 15-20 minutes.

brown the beef mince in a pan with a dash of olive oil. Break apart as it cooks, then add the spices and season with salt and pepper.

Toss the broccoli florets in a drizzle of chilli oil and once the kumara is finished, roast the broccoli in the air fryer for 5 minutes.

6. Serve the kumara in bowls together with the broccoli, beef mince, cottage cheese and avocado. Finish with a drizzle of hot honey over the top.
