Loaded with vegetables and good quality proteins, this pasta is delicious. A quick blend of cottage cheese and roasted peppers makes for an easy pasta sauce that is as nutritious as it is tasty. We love this loaded with whatever vegetables you've got on hand, just make sure there's plenty of variety and about 1 cup of vegetable per person. A sprinkle of fresh basil over the top is divine, as is a flourish of parsley if you've got it.

Ingredients

Sauce
  • ¾ cup cottage cheese

  • 3 Roasted red capsicums

  • 1 canned tomatoes

  • Handful basil leaves

Pasta with beef
  • 2 cups pasta shells

  • 500g Quality Mark beef mince

  • 2 tsp extra virgin olive oil

  • 1 onion

    diced
  • 2 garlic cloves

    minced
  • 4 cups seasonal vegetablesi

Method

In a blender, blitz together the roasted peppers, cottage cheese, tomatoes and fresh basil until smooth. Put aside for later.

In a pot of boiling water, cook your pasta according to packet instruction. Drain and keep aside.

In a hot pan, sauté the mince in the olive oil until browned and cooked through. You might need to do this in batches.

Add in onion, garlic and cook until both are translucent.

Add in the seasonal vegetables and cook for 5 minutes, stirring as you go.

Stir in the tomato red pepper sauce and continue cooking everything together for 5 minutes.

Throw the drained pasta into the pan and stir until everything is combined.

Serve immediately with extra fresh basil sprinkled over the top.
