Herby omelette with lamb mince

Ingredients

Mince
  • 250g Quality Mark lamb mince

  • 1 Tbsp olive oil

  • 2 shallots

    finely diced
  • salt and pepper

    to taste
  • 1 Tbsp smoked paprika

  • 2 small courgettes

    grated
  • 2 Tbsp mint leaves

    chopped
Omelettes
  • 6 eggs

  • ¼ cup cream

  • salt and pepper

    to taste
  • ½ cup Gruyere cheese

    grated
To serve
  • 2 handfuls baby spinach leaves

  • fresh herbs

    such as mint, parsley or chives

Method

For the lamb

To make the lamb heat a large frying pan on a medium heat.

Add a little olive oil to the pan along with the diced shallots and salt. Sauté until softened.

Increase the heat and add the lamb and garlic. Brown the mince, breaking it up with your spoon as you go.

When the meat has browned, add the paprika and courgette. Cook for a further minute or two until the courgette has softened.

Stir through the mint and keep warm while you prepare the omelette.

For the omelette

Heat a non-stick frying pan on medium heat. Whisk together the eggs, cream, herbs and seasoning.

Pour half the mixture into the heated pan. Cook gently for 5 minutes. Add the grated cheese half way through cooking so that it melts.

When the egg has set, arrange the spinach around the omelette and top with a couple of spoonfuls of lamb mince.

Serve with another sprinkle of chopped soft herbs.
