Everybody loves some garlic smashed potatoes. Light and fluffy on the inside and crunchy on the outside. Be sure to add lots of garlic for extra flavour. We love to use leftovers in our breakfast hash the following day.

Ingredients

Potatoes

1kg Agria potatoes

peeled and roughly chopped

2 Tbsp olive oil

3-5 garlic cloves

crushed

1 tsp dried thyme

A pinch of salt

A pinch of black pepper

To Make Potatoes

Preheat oven to 200°C.

Line an oven tray with baking paper and lightly oil.

In a large pot of water cook the potatoes until just tender, usually about 15-20 minutes depending on size

Drain well and place potatoes on the prepared baking sheet.

Using a fork or masher, smash the potatoes until roughed up a bit.

Drizzle olive oil, garlic and thyme over potatoes and season.

Place into the oven and bake for 18-20 minutes, until golden and crisp.
