A crisp, garden-fresh mix of tender green and creamy cannellini beans folded through a heap of herbs and a lively lemon-mustard dressing. The zesty flavours pair beautifully with slices of pan-seared lamb rump!
Ingredients
3 cups green beans
trimmed and cut into smaller pieces1 400g can cannellini beans
washed and drained1 handful parsley
roughly chopped3 Tbsp chives
freshgrated zest of 1 lemon
juice of 1 lemon
1 Tbsp Dijon mustard
1 garlic clove
minced4 Tbsp olive oil
a pinch ground black pepper
Method
In a small bowl, combine the dressing ingredients.
In a large bowl, add salad ingredients and mix well. Cover with the salad dressing and serve.
Note – this is also delicious if you steam the green beans until just tender!
