Dandan noodles are one of Sichuan’s most famous dishes, known for their bold, spicy, and nutty flavours. We use those flavours to create a great party snack that with lamb mince. Instead of the Sichaun peppercorns, we use hot honey for an easy shortcut to those big flavours. Wonton wrappers are easily found in the chiller section of your local Asian supermarket. They'll crisp up nicely. These are best made and served fresh, as they'll soften over time.

Ingredients

  • 30 wonton wrappers

  • 250g Quality Mark lamb mince

  • ½ onion

    diced
  • 1 Tbsp peanut butter

  • 1 tsp salt-reduced soy sauce

  • ¼ tsp Chinese five spice

  • 2 spring onions

    thinly sliced
  • Handful fresh coriander leaves

  • Hot honey

    to serve

Method

Preheat the oven to 180 degrees.

Line muffin tins with two wrappers, crossed so they stick up like a star. Continue for the whole tray.

Lightly spray with oil and bake for 6 minutes, then leave to cool in the tins. They may bubble up, this is normal.

Cook the mince, breaking it up as you go.

Add the onions, cook for a few minutes and then stir through the peanut butter, soy sauce and 5 spice, allowing it to melt a little.

Spoon the mince filling into each wonton cup.

Sprinkle with a little spring onion, coriander and drizzle over hot honey. Serve immediately.
