If you need a side dish to serve with a Mediterranean-style grilled lamb or other entrée, then this quick version of a Caprese salad would work well.

Add a touch of colour to your table with this Caprese salad. The classic combination of tomato, mozzarella and basil can't be beaten and this salad will complement any summer meal.

Ingredients

4 handfuls of cherry tomatoes

halved

125g boccocini

cut each ball in half

a handful basil leaves

small leaves can stay whole, roughly chop the larger

arrow

1 tablespoon extra virgin olive oil

A pinch of black pepper

A drizzle of balsamic vinegar

Method

To Make Salad

Mix halved tomatoes and mozzarella in a bowl.

Drizzle with the olive oil, balsamic vinegar and season with cracked pepper.

Scatter torn basil leaves over the tomatoes.

Serve as an entrée on crostini or as a salad at lunch or dinner alongside your favourite beef or lamb.

Note: For best flavour store tomatoes at room temperature and remove cheese from the fridge to serve at room temperature also.
