Naturally sweet, carrots are often overlooked but here, we hero this vibrant vegetable. Grated carrots are combined with capsicum and herbs; then tossed through a zesty citrus and ginger dressing for the ultimate easy side dish. Family friendly, this recipe is perfect with your New Zealand beef or lamb, and if the dressing is kept separate, it's great for meal prep too.

Salad
10 carrots
grated or shredded
red capsicum
deseeded, chopped
1 cup parsley
roughly chopped
1 spring onion
sliced
½ cup raw cashew nut
2 Tbsp sesame seeds
Dressing
juice of 1 lemon
juice of 1 lime
1 tsp grated fresh ginger
2 garlic cloves
minced
2 Tbsp soy sauce

Method
For the salad

In a small bowl, mix-together dressing ingredients.

In a large bowl or plate, combine the grated carrots, capsicum, spring onion and parsley.

Drizzle the dressing over the salad and top with cashew nuts and sesame seeds.
