Grated carrots are combined with capsicum and herbs; then tossed through a zesty citrus and ginger dressing for the ultimate easy side dish. For the salad

In a small bowl, mix-together dressing ingredients.

In a large bowl or plate, combine the grated carrots, capsicum, spring onion and parsley.
