This Chinese potato salad is a quick and easy side dish made with shredded potatoes, garlic, and a simple soy sauce and sesame oil dressing. Ingredients

  • 3 potatoes

    peeled and julienned
  • 1 carrots

    peeled and julienned
  • ½ cup finely chopped fresh coriander

  • 1 Tbsp light soy sauce

  • 1 Tbsp chilli

    crisp
  • 1 tsp sesame oil

  • 2 Tbsp canola oil

  • 1 spring onion

    finely chopped
  • 1 red chilli

    finely chopped
  • ½ tsp Sichuan peppercorn

    crushed
  • 2 garlic cloves

    finely diced
  • ¼ tsp brown sugar

Method

Soak the potatoes in cold water for 30 mins to get rid of the starch, then rinse a few times.

Cook the potatoes in a large saucepan of boiling water until just starting to soften. This won’t take very long. Add the carrot, drain, then plunge the potato and carrot into ice water.

Once cooled, drain and mix with the coriander, soy sauce, chilli crisp, and sesame oil.

Heat the canola oil in a saucepan until very hot, then pour over the spring onion, chilli, Sichuan pepper, garlic, and sugar. Mix into the potatoes.
