It's the perfect side dish to go with this recipe:
Ingredients
3 potatoes
peeled and julienned1 carrots
peeled and julienned½ cup finely chopped fresh coriander
1 Tbsp light soy sauce
1 Tbsp chilli
crisp1 tsp sesame oil
2 Tbsp canola oil
1 spring onion
finely chopped1 red chilli
finely chopped½ tsp Sichuan peppercorn
crushed2 garlic cloves
finely diced¼ tsp brown sugar
Method
Soak the potatoes in cold water for 30 mins to get rid of the starch, then rinse a few times.
Cook the potatoes in a large saucepan of boiling water until just starting to soften. This won’t take very long. Add the carrot, drain, then plunge the potato and carrot into ice water.
Once cooled, drain and mix with the coriander, soy sauce, chilli crisp, and sesame oil.
Heat the canola oil in a saucepan until very hot, then pour over the spring onion, chilli, Sichuan pepper, garlic, and sugar. Mix into the potatoes.
