Enjoy a refreshing and vibrant noodle salad featuring sweet mango, crisp cucumber, and a spicy chilli kick. Tossed with vermicelli noodles and fresh herbs, this dish combines flavours and textures perfect for warm-weather dining. It’s light, flavourful, and quick to prepare — ideal for a unique side or a satisfying main.
Ingredients
- 1 large cucumber peeled into ribbons
- handful fresh mint 
- 1 chilli deseeded and sliced
- 2 mango thinly sliced
- ¼ cup cashew nuts 
- 1 shallot thinly sliced
- 150g dried rice rice noodles 
- 1 Tbsp soy sauce 
- 1 Tbsp honey 
- 1 Tbsp sesame oil 
- juice of 1 lime 
Method
Cook noodles following packet direction. Drain well and set aside to cool.
In a small bowl, mix together dressing ingredients.
Using a vegetable peeler or julienne, thinly slice cucumber.
Place noodles into a serving bowl and top with mango, shallot, fresh mint, cashew nuts, cucumber and chilli. Drizzle with dressing and serve.
