Ingredients
1 Tbsp olive oil
500g Quality Mark beef mince
1 onion
diced2 garlic cloves
crushed1 carrot
grated1 stick of celery
finely diced1 green capsicum
diced300g dried wholegrain penne pastai
2½ cups reduced-salt beef stock
1 (400g) canned chopped tomatoes
2 Tbsp tomato paste
2 Tbsp tomato sauce
1 Tbsp wholegrain mustard
1 Tbsp Worcestershire sauce
1 cup fat-reduced edam cheese
grated½ tsp paprika
1 tsp dried mixed herbs
¼ cup gherkinsi
diced2 tomatoes
diced1 cup iceberg lettuce
shredded and sliced into chunkschopped fresh parsley
to garnish
Method
Heat the oil in a large heavy-based pan over medium-high heat.
Sauté onion, garlic, carrot, celery, and capsicum for 4–5 minutes until softened.
Add the mince and cook for 4–5 minutes, breaking it up with a spoon, until browned.
Stir in tomato paste, tomato sauce, mustard, Worcestershire sauce, paprika, and mixed herbs. Cook for 1 minute.
Pour in beef stock and chopped tomatoes and bring to a simmer.
Add the dried pasta, ensuring there’s enough liquid to just cover. Add a splash of water if needed.
Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is just tender and most liquid absorbed.
Reduce heat to low. Stir in half the grated cheese until it’s melted and creamy.
Spoon into bowls. Top with remaining grated cheese, pickles, fresh diced tomato and lettuce, and a sprinkle of parsley.
Pro tips:
Load up the mince with whatever veggies you have in your fridge. Have you got some spinach that needs to be used? Throw that in and wilt it down. Mushrooms are a great addition grated up too.
