Ingredients
4 celery stalks
finely sliced2 apples
roughly chopped1 cup grape
halved1 romaine or little gem lettuce
1 lemon
juiced50g walnuts
or pecans1 Tbsp mayonnaise
2 Tbsp Greek style yoghurt
1 tsp Dijon mustard
Method
Heat a frying pan over medium heat and toast the pecans or walnuts or 3-4 minutes or until golden. Set aside.
Place chopped celery, apples and grapes into a bowl and drizzle with lemon juice.
Add the mayonnaise, Greek yoghurt and mustard and mix well.
Arrange the lettuce leaves on a serving platter and spoon over the celery mixture. Top with the nuts and serve fresh.
