Ingredients

  • 4 celery stalks

    finely sliced
  • 2 apples

    roughly chopped
  • 1 cup grape

    halved
  • 1 romaine or little gem lettuce

  • 1 lemon

    juiced
  • 50g walnuts

    or pecans
  • 1 Tbsp mayonnaise

  • 2 Tbsp Greek style yoghurt

  • 1 tsp Dijon mustard

Method

Heat a frying pan over medium heat and toast the pecans or walnuts or 3-4 minutes or until golden. Set aside.

Place chopped celery, apples and grapes into a bowl and drizzle with lemon juice.

Add the mayonnaise, Greek yoghurt and mustard and mix well.

Arrange the lettuce leaves on a serving platter and spoon over the celery mixture. Top with the nuts and serve fresh.
