Lightly steamed, carrots become tender without losing their vibrant colour. We love them tossed with a spiced orange butter that's easy to make. Pro tip: Make double of the butter and freeze in little discs, ready to add as a flavour bomb to your New Zealand beef or lamb dinner anytime.

Ingredients
1 bunch, washed baby carrots
1 bunch, leaves chopped parsley
1 small pinch cumin seeds
1 orange, finely grated orange zest
100g, softened butter
Method
To Cook Carrots

Mix the parsley (saving a few leaves for garnish), cumin seeds, orange zest and butter in a food processor or by hand.

Place in the fridge for about 10 minutes

Steam or boil the carrots until cooked but firm (about 5 minutes), toss in a bowl with the parsley, cumin and orange butter and sprinkle with parsley to serve.
