Ingredients

For the salad
  • 4 carrots

    washed and grated into ribbons
  • 2 spring onions

    chopped
  • ⅓ cup raisins

  • ½ cup slivered almonds

  • A handful fresh coriander

    roughly chopped
For the dressing
  • ¼ cup olive oil

  • 1 tsp lime or orange zest

  • 1 garlic clove

    minced
  • 1 tsp fresh ginger

    finely grated
  • 3 Tbsp lime juicei

  • 2 Tbsp honey

  • 1 tsp curry powder

  • ¼ tsp cayenne pepper

  • A pinch salt
