Ingredients
4 carrots
washed and grated into ribbons2 spring onions
chopped⅓ cup raisins
½ cup slivered almonds
A handful fresh coriander
roughly chopped
¼ cup olive oil
1 tsp lime or orange zest
1 garlic clove
minced1 tsp fresh ginger
finely grated3 Tbsp lime juicei
2 Tbsp honey
1 tsp curry powder
¼ tsp cayenne pepper
A pinch salt
Method
Place all salad ingredients into a medium bowl and toss well.
Whisk together dressing ingredients and drizzle over salad.
