Turn your summer into a flavour fiesta with these juicy Buffalo lamb ribs, perfectly oven-baked and smothered in Alderson’s Buffalo Wing sauce. Pairing them with a colourful platter of cherry tomatoes, crisp cucumber and corn on the cob, brings vibrancy to your dinner without skimping on taste.
Perfect for backyard gatherings or impressing loved ones on the weekend, this is easy to prepare, full of flavour and just the right amount of zing. It’s a summer BBQ feast that’s fun, fresh and finger licking good. Grab the napkins, you’re going to need them!
Ingredients
1kg Quality Mark lamb ribs
trimmed of excess fat2 Tbsp olive oil
2 tsp smoked paprika
1 tsp garlic powder
½ tsp black pepper
¼ cup Aldersons Buffalo Wing Sauce
1 cup cherry tomatoes
halved1 telegraph cucumber
sliced into sticks1 red capsicum
sliced1 yellow capsicum
sliced2 - 3 ears of sweetcorn
cooked and cut into easy chunks1 small red onion
thinly sliced100g baby spinach
1 Tbsp chopped fresh parsley
2 Tbsp low-fat Greek style yoghurt
1 tsp Aldersons Buffalo Wing Sauce
½ tsp lemon juice
Method
Preheat your oven to 160°C.
Line a baking tray and place a wire rack over the top.
Rub the lamb ribs with olive oil, smoked paprika, garlic powder and pepper. Make sure they are evenly coated.
Place the ribs on the wire rack and bake for 1 hour, turning halfway through.
Remove ribs from the oven and brush with the Aldersons Buffalo Wing Sauce.
Return to the oven at 180°C for 10 to 15 minutes to caramelise the glaze.
Optional: grill them on the barbecue for 2 to 3 minutes for an additional smoky flavour.
While the ribs finish cooking, arrange your prepped vegetables on a big platter.
Sprinkle with parsley.
In a dipping bowl, mix together the Greek yoghurt with Buffalo Wing Sauce and lemon juice. Serve on the side for a light dip.
Slice the ribs between the bones and place alongside the fresh vegetables.
Pro tips:
- For a smokier flavour, finish the ribs on a hot BBQ for 2-3 minutes each side
- You can grill the corn on the BBQ too for additional flavour
- Marinate the ribs in the spice rub for 1-2 hours for a deeper flavour
- Serve with lemon wedges
