Ingredients
500g Quality Mark beef brisket, cooked
sliced or shredded12 mini slider bunsi
2 cups baby spinach leaves
¼ red cabbage
thinly sliced1 carrot
julienned½ cup mayonnaise
3 Tbsp sun-dried tomatoes
finely chopped1 tsp lemon juice
ground black pepper
to taste
Method
In a small bowl, mix together mayonnaise, chopped sundried tomatoes, lemon juice, and a pinch of black pepper. Stir until well combined. Set aside.
Warm the slider buns lightly in the oven or toaster and gently reheat the brisket.
Spread a generous dollop of sundried tomato mayo on the bottom half of each bun.
Layer with a handful of fresh spinach leaves, then the cabbage and carrot.
Pile on tender slices or shredded brisket.
Top with the other half of the bun and press gently.

Serve the sliders with a side of kumara fries for a fun, balanced meal that's packed with flavour and a cheeky veggie boost too.
