Ingredients
250g Quality Mark beef mincei
blended with the mushrooms250g Meadow Mushrooms
blended with the mince2 Tbsp olive oil
1 onion
finely chopped1 carrots
finely chopped or gratedfinely chopped celery stalk
¼ cup tomato paste
finely chopped2 x 400g can chopped tomatoes
1 cup water
1 tsp dried oregano
750g spaghetti pasta
grated Parmesan cheese
1/2 cup basil leaves
Method
In a large stockpot bring salted water to the boil.
Once rapidly boiling add the pasta, cook until al-dente.
Drain water and sprinkle with a little olive oil so the pasta doesn’t stick.
Heat the oil in a large frying pan over a medium heat and cook the garlic, onions, carrot and celery with a sprinkle of salt, for 8 minutes until soft.
Add the tomato paste and cook for 2 minutes, stirring.
Finely chop the mushrooms (or blitz in the blender) to replicate mince, then add to the pan with the mince, raise the heat a little, and cook, stirring occasionally for 10 minutes.
Add the tomatoes, water and oregano and season with salt and pepper. Simmer for about 25 minutes, stirring occasionally. Adjust seasoning to taste.
At the last minute add the al-dente pasta to the sauce, serve onto the plate and add a large spoonful of mince sauce, sprinkle with cheese and top with basil.
You can also turn this into a lasagne in just a couple of easy extra steps.
