These viral beef tortilla skewers are the dinner hack you didn’t know you needed. They’re packed with lean mince, loaded with hidden veg, stacked sky-high, and slicked with a tangy tamarind twist.

Whether you’re after a quick feed for the whanau or a hands-on snack the kids will rave about, these are so good you might just ‘accidentally’ eat a couple yourself before they hit the table. Ingredients

Beef skewers
  • 500g Quality Mark Lean Beef Mince

  • 1 small onion

    finely diced
  • 2 garlic cloves

    crushed
  • ½ cup carrot

    grated
  • ½ cup courgette

    grated
  • 2 Tbsp chopped fresh parsley

  • 1 Tbsp Jenny's Kitchen Tamarind Chutney

  • salt and pepper

    to taste
  • 6 - 8 tortillas

  • olive oil

To serve
  • lettuce

  • cucumber

  • tomato

  • Garlic yoghurt

Method

If using wooden skewers, soak them in cold water for at least 30 minutes to prevent burning.

In a large bowl, combine the lean beef mince, onion, garlic, carrot, courgette, parsley, Tangy tamarind sauce, salt and pepper.

With clean hands, mix everything together until well combined.

On a flat surface, layer the tortillas, spreading a thin layer of the mince mixture right to the edge and then adding another tortilla. Repeat until the stack is complete.

Gently press the stack together and then thread the skewers through the stack vertically, approximately 2 inches apart.

Slice into thick vertical strips.

Cook on medium heat with oil. Don’t have the heat too high or the insides won’t cook.

Turn each to get all sides golden and serve with a crunchy salad and garlic yoghurt dipping sauce on the side.

Tips and tricks:

  • If you want to use your oven, bake them at 200°C for 20 minutes or so, turning half way through, until they’re crispy and golden.
  • If you want to use your Air fryer, we’d recommend 170°C for 10 minutes.
  • You can make these as big or as small as you like, if you’ve got little ones use small tortillas and skewers to make the perfect kid size portion.
