Look, we all know dinner time can sometimes feel like a battle, kids whining, the clock ticking, and you wondering what on earth to throw together. Enter this Beef Taco Rice Bake: a cheeky little number that’s loaded with flavour, super simple, and cooks itself mostly in the oven. Think juicy New Zealand beef mince, sneaky veg, and a cheeky kick from Bull Rush seasoning all tucked up with rice and melted cheese. It’s basically a fiesta in a dish without any of the drama. Bonus points: just one pan to wash afterwards, what a win!

Ingredients

  • 500g Quality Mark beef mince

  • 1 Tbsp olive oili

  • 1 onion

    finely chopped
  • 2 garlic cloves

    minced
  • 1 large carrot

    grated
  • 1 red capsicum

    diced
  • 1 can crushed tomatoes (400g)

  • 1 cup long grain rice

    uncooked
  • 1 ¾ cups water

  • 3 Tbsp Bull Rush by Taste Lab

  • 1 400g can sweet corn kernels

    drained
  • 1 cup grated cheesei

  • fresh corianderi

    to garnish

Method

Preheat oven to 180°C.

Heat the oil in a large frying pan over medium heat.

Add onion and garlic, sauté until soft.

Add the beef mince and cook until browned, breaking it up with a wooden spoon.

Stir in grated carrot and diced capsicum. Cook for another 3 minutes.

Sprinkle in Bull Rush seasoning, stir well. Pour in crushed tomatoes or passata, mix. Simmer gently for 5 minutes.

In a large ovenproof dish, add uncooked rice and water. Stir in corn kernels.

Spoon the beef and vegetable mixture evenly over the rice.

Cover the dish with foil and bake for 30 minutes, or until the rice is cooked and liquid absorbed.

Remove foil, sprinkle grated cheese over the top. Return to oven uncovered for 5-10 minutes until cheese is melted and golden.

Garnish with fresh coriander or parsley if liked.

Serve with a side of steamed greens or a simple salad.
