Beef salad with crunchy noodles

Sweet chili sauce gives this fresh beef salad a spicy Thai kick. Perfect for a quick and healthy weekday meal.
Ingredients
600g Quality Mark beef sirloini
4 Tbsp vegetable oil
2 carrots
halved, and cut into fine strips2 Lebanese cucumbers
halved, and cut into fine strips125g snow peas
cut into fine strips225g crispy noodles
2 lime juice
3 Tbsp sweet chili sauce
2 cups fresh coriander
stalks removed
Method
Coat beef strips with 2 tablespoons of the vegetable oil. Preheat a large frying pan or BBQ hot plate until moderately hot.
Cook the beef in 2 batches.
Set aside whilst making the salad.
Combine the strips of carrot, cucumber and snow peas with the noodles.
Mix together the lime juice, sweet chilli sauce and extra oil and toss through the salad.
Add the warm beef strips to the salad and noodles.
Add the coriander leaves and toss to combine.
