Ingredients

For the kofta:
  • 500g Quality Mark beef mince

  • 1 small onion

    finely grated or minced
  • 2 garlic cloves

    minced
  • 2 Tbsp chopped fresh parsleyi

  • 1 Tbsp fresh minti

    chopped
  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp ground cinnamon

  • ½ tsp smoked paprikai

  • salt and pepper

    to taste
  • 1 egg

  • ¼ cup breadcrumbs

For the roasted vegetables:
  • 2 medium carrots

    peeled and cut into chunks
  • 1 red onion

    cut into wedges
  • 2 Tbsp olive oil

  • salt and pepper

    to taste
For the herbed yoghurt sauce:
  • 1 cup Greek style yoghurt

  • 1 Tbsp chopped fresh parsleyi

  • 1 garlic clove

    minced
  • juice of ½ lemon

  • salt and pepper

    to taste

Method

Toss carrots, kumara, and red onion with olive oil, salt, and pepper. Roast in a preheated oven at 200°C for 25–30 minutes until golden and tender, or air fry at 200°C for 15–20 minutes, shaking halfway.

In a large bowl, combine all kofta ingredients. Mix well with your hands until just combined. Using damp hands, shape the mixture into 12–16 small ovals or meatballs.

Preheat your air fryer to 200°C and lightly spray the basket. Arrange kofta in a single layer in the basket. You might need to cook in batches.

Air fry for 10–12 minutes, turning halfway, until browned and cooked through. Check one kofta for doneness before removing the rest.

In a small bowl, mix together yoghurt, herbs, garlic, lemon juice, salt, and pepper. Adjust seasoning to taste.

Divide roasted vegetables and kofta among four plates or meal prep containers. Drizzle with herbed yoghurt sauce or serve on the side. Garnish with extra herbs if desired.

Tips and tricks:

  • Throw a handful of spinach or silverbeet into the vegetables at the end to get some more green in the salad.
  • Use a vegetable chopper or blender to finely dice the onion. A fine chop blends seamlessly into the meat, preventing the kofta from falling apart and avoiding big onion chunks.
  • Don’t overcrowd the air fryer basket. Cook the kofta in a single layer and in batches if needed, turning them gently halfway through for even browning and crispiness.
