Ingredients

  • 500g Quality Mark beef mince

  • 1 onion

    finely chopped
  • 2 garlic cloves

    crushed
  • 2 Tbsp curry paste

  • 2 tsp fresh ginger

    grated
  • 1 and 1/2 cups beef stock

  • 400ml coconut milk

  • 2 Tbsp brown sugar

  • 1kg / 6 sheets puff pastry

To serve
  • 2 Tbsp yoghurt

  • 1/2 cucumber

    diced

Method

To Make Filling
1

Place beef mince in a bowl and mix in a little oil.

2

Heat a large frypan, ensure it is hot.

3

Crumble in half of the mince.

4

Brown the mince, breaking up any lumps with a fork.

5

Remove first batch, reheat pan and cook remaining mince.

6

Return first batch of mince to the frying pan.

7

Add the onion, garlic, curry paste and ginger, cook stirring for 1 minute.

8

Add stock and coconut milk.

9

Bring to the boil, reduce heat and simmer for 20 minutes.

10

The mince mixture should be fairly thick. Remove from heat and cool.

To Assemble
1

Preheat oven to 200 °C.

2

Work with one pastry sheet at a time. Cut each pastry sheet in half vertically, three times, to give four equal strips.

3

Place a tablespoon of cooled beef mince mixture on the bottom right-hand corner of each strip.

4

Then fold the corner over to form a triangle.

5

Keep folding, retaining the triangular shape with each fold, until you reach the top of the strip.

6

Place the triangles on a baking tray lined with baking paper.

7

Bake for 10 minutes or until curry puffs are puffed and golden.

8

Serve with plain yoghurt and chopped cucumber.
