These beef and herb waffle sandwiches are flipping the script with juicy New Zealand beef patties sandwiched between cheesy, herby waffles, talk about next-level yum! Packed with flavour, a hit of smoky paprika, and a cheeky dollop of aioli or mustard mayo, this meal is as fun to make as it is to eat. Top it with a fried egg if you want to really show off. Perfect for feeding the crew, impressing the mates, or just treating yourself to a bit of foodie magic.

Ingredients
500g New Zealand beef mince
1 garlic clove
finely minced1 Tbsp Sunday Roast by Taste Lab
1 tsp Dijon mustard
½ tsp smoked paprika
olive oil
for cooking1 cup plain flour
1 tsp baking powder
1 egg
¾ cup milk
½ cup grated cheese
2 tsp dried herbsi
pinch of salt
spray oil
for the waffle maker
garlic aioli
or mustard mayopickled red onions
or gherkinsfresh rocket, watercress or a mix of both
or baby spinachfried eggi
Method
In a bowl, combine the beef mince, Sunday Roast mix, mustard and paprika. Mix gently until just combined.
Form into four patties.
Heat a drizzle of olive oil in a pan over medium-high heat and cook patties for 3–4 minutes on each side, until browned and cooked through.
Set aside to rest.
In a mixing bowl, whisk together the flour, baking powder, egg, and milk until smooth.
Fold in the grated cheese, chopped herbs, and a pinch of salt.
Heat your waffle maker, lightly grease it, and cook according to its instructions.
Spread aioli or mustard mayo on one waffle, layer with a beef patty, a few pickled onions or gherkins, a handful of rocket or spinach, and top with a second waffle. Add a fried egg if you’re feeling bold.
