Beef and bean quesadillas

Making the most of quality beef and humble baked beans, kids will go mad for these quesadillas. Feel free to add in grated carrot or zucchini, or corn kernels to bring in some vegetables.

Ingredients

Quesadilla
  • 250g Quality Mark beef mince

  • 1 cup baked beans

    drained
  • 1 cup grated cheese

  • 4 tortillas

    20cm diameter
To Serve

Method

To Make Beef

Mix the beef mince, baked beans and cheese in a bowl.

Season with salt and freshly ground black pepper.

Divide the mixture into 4 even-sized portions.

Press beef mixture over half of each tortilla. Fold over to enclose filling.

Heat large non stick frying pan over moderate heat.

Spray tortilla lightly with oil.

Cook for 5 minutes each side until golden brown and cooked through.

To Serve

Cut the quesadillas into wedges.

Serve with a crisp green salad.
