These Italian-Style Baked Breakfast Eggs with Meatballs are comfort food at its best! This one-pan dish sees savoury eggs simmered in a rich pasta sauce alongside a generous helping of Angel Bay Gourmet Beef Meatballs. Serve with plenty of crusty bread for a delicious brunch option that makes a great dinner, too.

Ingredients

  • 1 pack Angel Bay Gourmet Beef Meatballs

  • 1 x 420g can tomato pasta saucei

  • 6 eggs

  • to serve basil leaves

    fresh and torn
  • crusty bread

    fresh
  • kosher salt

  • black pepper

Method

For the Meatballs

Remove the meatballs from packaging before cooking. If product is thawed, halve the following cooking times.

Oven Fan Bake Option: Preheat oven to 200oC. Cook from frozen for 9-10 minutes, turning partway through.

Frying Pan: Cook from frozen on a medium heat for 14-15 minutes, turning every 3-4 minutes.

Microwave: Place evenly on a plate and microwave (500W) from frozen for 1 minute 30 seconds, flip and repeat. Rest for 1-2 minutes. (Microwave heating times may vary depending on number of meatballs heated and microwave power).

Air Fryer: Cook from frozen on 180oC for 7-8 minutes, turning partway through. Heating times may vary depending on the number of patties and air fryer power.

For the Breakfast Bake

Preheat your oven to 180°C.

Heat the pasta sauce.

Arrange 5 to 6 cooked meatballs in individual baking dishes evenly with the pasta sauce.

Break an egg into the middle of each dish and bake for 8-12 minutes until the egg is cooked to your liking.

Garnish with torn basil leaves and serve with plenty of crusty bread.
