Avocado pasta salad
Simple pasta salad recipe

This is a great salad to help use up the glut of avocados when they're in the season. Super creamy, we love the vibrant green colour as a way to get extra vegetables in.
Ingredients
400g wholemeal pasta
1 avocado
roughly chopped1/2 cup basil leaves
250g cherry tomatoes
halved
1 avocado
1 tablespoon lemon juice
1 garlic clove
1 cup basil leaves
3 cups baby spinach
1/4 tsp salt
Method
Add 4 cups of water to a large pot and bring to boil.
Add a pinch of salt and the pasta.
Stir gently.
Cook for 5-7 minutes or until the pasta is soft.
Remove from heat and drain the water.
To make the pesto add 1 avocado, lemon juice, garlic clove, 1 cup of basil, baby spinach and salt to a food processor and blend until smooth.
Add 4 cups of water to a large pot and bring to boil.
Add a pinch of salt and the pasta.
Stir gently.
Cook for 5-7 minutes or until the pasta is soft.
Remove from heat and drain the water.
In a large bowl, add the pasta, pesto, sliced avocado, cherry tomatoes and remainder of the basil. Toss everything together until evenly coated. Season to taste with more salt
