Ingredients
Salad
3 to 4 handfuls baby spinach
1 red apple
thinly sliced
1 green apple
thinly sliced
A handful of roasted blanched almonds
100g feta cheese
1/3 cup cranberries
Dressing
2 Tbsp pomegranate balsamic vinegar
2 Tbsp extra virgin olive oil
2 Tbsp honey
A pinch of black pepper
Method
To Make Salad

Slice apple thinly and squeeze over lemon juice to stop browning.

On a platter layer spinach, cranberries, nuts and cheese.

Combine the dressing ingredients and pour over salad just before serving
