Ingredients

Salad
  • 3 to 4 handfuls baby spinach

  • 1 red apple

    thinly sliced
  • 1 green apple

    thinly sliced
  • A handful of roasted blanched almonds

  • 100g feta cheese

  • 1/3 cup cranberries

Dressing
  • 2 Tbsp pomegranate balsamic vinegar

  • 2 Tbsp extra virgin olive oil

  • 2 Tbsp honey

  • A pinch of black pepper

Method

Slice apple thinly and squeeze over lemon juice to stop browning.

On a platter layer spinach, cranberries, nuts and cheese.

Combine the dressing ingredients and pour over salad just before serving
