Egg-cellent recipes for your weekly rotation

Eggs are a great way to add protein and other nutrients to lunch and dinner as well. They help bind foods together such as schnitzel and the crumb, add a touch of indulgence as a fried egg to a burger, or help turn a noodle soup into a well-rounded meal.

Beef Schnitzel

This panko crumb mix gives a crisp edge while the seeds add variety in taste and crunch. The coleslaw is punctuated with pickles to help cut through the richness of the schnitzel and all round, this is an amazing dinner for the midweek hustle.

Breakfast Bolognese

This is called breakfast Bolognese, but we adore making it for dinner too! Make sure there's an egg per person and serve with a slice of thick sourdough to mop everything up.

Burgers

Kiwis love a burger with beetroot, egg and cheese and it levels up the simplest patties. Here’s the kiwi classic – it’s great with both beef or lamb!

Mince Fried Rice

This is a huge favourite in our house and a great way to use up odds and ends in the veggie drawer. Add an egg and leftover rice and you’ve got a filling and nutritious meal at your finger tips. Swap the beef for lamb and you’ll still have a delicious meal.

Smashed Almond Cutlets

Take cutlets to a whole new level with the additional of a texture almond crust – dipped in egg and then crumbed, these cutlets are the perfect light meal. Green beans and peas on the side for freshness and a wedge of lemon to squeeze over the top.

Meatballs need an egg to help bind all the ingredients, and while we love a good meatball this Balkan take is just more interesting. The sweet red pepper sauce is worth the minute to make, it balances against the rich beef.
