Celebrate Cinco de Mayo with these Mexican-inspired recipes
Cinco de Mayo is an important celebration of Mexican cultural heritage, particularly for America's growing Hispanic population. This commonly misunderstood holiday has a fascinating history and isn’t celebrated widely throughout Mexico itself, serving for many as a perfect excuse to eat amazing food and drink margaritas. Here are some of our favourite Mexican-inspired dishes to celebrate with.
Street-Style Beef Tacos
Tacos make for an easy to prepare lunch, dinner or even a snack for hungry teens. The fresh ingredients topped with juicy pieces of tender beef will make your mouth water just thinking about this recipe. Have a bit of fun with the salad ingredients you use to build the tacos - variety in texture and colour is key.
Mexican Beef Sliders with Jalapeño Salsa & Avocado Cream
The jalapeño salsa gives these sliders a kick and is a perfect match for the Avocado cream. Enjoy these with family and friends this summer season.
Barbecue Fajitas with Avocado Salsa
Fajitas are a great way to stretch your meat budget and are delicious made with either beef or lamb. Steaks that would serve 4 will feed 6-8 if made into fajitas. The spice mix can be made ahead of time and stored.
Nourishing Mexican Beef Bowl
A delicious and healthy deconstructed Mexican beef bowl, this recipe is sure to tick all the boxes. The mince packs the perfect flavour with just the right amount of spice. We love adding the coriander stalks to the mince for an extra depth of flavour. With a colourful mix of Summer veges, don’t hold back on adding any that need to be used up from your fridge.
Beef Nachos with Avocado Salsa
Who doesn't love nachos? If you can't find the perfect avocados switch them out for a tomato salsa or spicy jalapenos.
Lamb and Sultana Empanada
This moreish Mexican classic is similar to a Kiwi pastry and satisfies all of your street food cravings: savoury, slightly sweet, crispy fried crust, and packed with delicious lamb mince.
Hearty Chilli Con Carne
Take the time to create this hearty dish. It won't let you down, we guarantee it will be full of flavor.
Quesadillas
A Mexican style toasted tortilla is perfect for a casual, easy meal or snack. Packed full of veges and easy to make mince balls, if you want more spice add some chilli to the mince patties.
Mexican Steak Fiesta with Garlic Capsicum Sauce
Mexican food is fun, vibrant and tasty – and it’s easy to create a great Mexican-style meal at home. Have as many accompaniments on the table as possible such as sour cream, guacamole, chilli sauce, fresh herbs – the more colours the better. This is great with any fast-frying steak cut.
Rubbed Beef Fillet with Two Salsas
A recipe to spice up the traditional steaks on the barbecue this summer. Both salsas complement the beef beautifully, yet offer very different combinations of flavour. We suggest keeping a jar of these on hand over the barbecue season - our guess is you'll be enjoying them on a range of meals!
Beef Steak Wraps
Easy to prepare, this recipe is perfect to get the whole family involved. Form an assembly line and get little hands in your family to get creative and help put together the ingredients.
Beef 'n' corn chip pie
Corn chips and mince are some of kids' favourites and here they are combined to make a great-tasting family pie - perfect for the weekend!
Pulled Beef'n'Beer Tacos
This taco recipe is sure to get your taste buds dancing. The beef is slow-cooked in aromatic spices and beer so you end up with pull-apart beef that’s incredibly moist and bursting with flavour. Not commonly known, cinnamon, cloves and star anise are used to add a unique flavour to Mexican style dishes. Add all your favourite toppings and enjoy.
Jalapeño Double Smash Burgers
Our Jalapeño aioli double patty smash burger is a crowd favourite that we love to make whenever entertaining guests. It’s a quick and easy recipe that tastes great. It’s comprised of two juicy patties topped with two slices of cheese, onion, tomato, lettuce and a spicy jalapeño sauce on a lightly toasted bun.
Pulled Beef Nachos
You can't go past pull-apart beef, served with nachos, sour cream and coriander. Make sure to pass the lime wedges.
Beef Fajitas
Tender, juicy, melt-in-your-mouth slices of steak with capsicum and onion. Is there anything better? Serve with tortillas and lime.
